With exception of pancakes/bliny (if rolled properly), it lacks the most important quality of fastfood, shared between burgers, pizza, shawarma and sushi rolls (yes, those are in fact fastfood, japanese cuisine is somewhat different) - you can't consume it without fucking plate and tableware, or better yet on the move.

Correct. OP probably wrote about some ethnic fast-food, but truth is that established samey chains rule food courts (with bliny/potato enterprises being rarer and generally less popular than even some McNoname Burgers let alone Vkusno-I-Tochka bootleg Mac), and shawarma rules the streets.
